Pam Hurst’s White Chili


1 store roasted chicken, shredded or cubed

1 chopped onion

1 chopped red bell pepper

1 chopped green bell pepper

Oil for browning onion

2 C. salsa

1 C. frozen corn kernels

2 C. chicken broth

2 (14 oz.) cans great Northern beans, rinsed & drained

12 oz. pepper jack cheese, cubed or grated

 

In a large pot or saucepan, brown onion in oil.  Add remaining ingredients.  Stir together and simmer over low heat for about 30 mins.  or until cheese has melted and chili is hot.

 

*After browning the onion, I transferred it to my slow cooker and added ingredients.  I cooked it on high for two hours, then on low until the chili was hot.

Pam Hurst’s Oatmeal Cranberry Cookies


¼ C. butter, softened

 

¼ C. shortening

½ C. sugar

1/3 C. brown sugar, packed

1 egg

½ tsp. vanilla

1 ¼ C. flour

½ tsp. baking powder

½ tsp. baking soda

½ tsp. cinnamon

¼ tsp. salt

1 C. regular rolled oats

½ C. dried cranberries, finely chopped

1/4 C. chopped walnuts, have used pecans as well

 

Preheat oven to 350 degrees.  Cream butter, shortening and both sugars until light and fluffy, add egg and vanilla.  Stir remaining dry ingredients together and then add to the creamed mixture.  Spoon mixture onto, lightly greased cookie sheet and bake for 8-10 minutes.

Marti's Mac & Cheese


Marti’s Mac & Cheese

Ingredients:

16 oz large elbow macaroni

1 ½ sticks of butter

12 oz Velveeta, cut into large cubes

¾ cup shredded extra sharp cheddar

¾ cup shredded mild cheddar

¾ cup shredded Monterey Jack

¾ cup shredded Muenster

3 cups heavy whipping cream

3 eggs lightly beaten

Salt and pepper

Olive Oil

Directions:

Preheat oven to 350.

Put olive and salt in a large pot of water, bring to a boil and cook noodle until almost done.  Drain.

In sauce pan, melt butter.  In a large bowl, mix macaroni with ¾ of the melted butter.

Mix in ½ of the shredded cheeses, except Velveeta.

Mix in ¾ whipping cream and eggs and mix until creamy.  Add salt and pepper and toss.

In 9x13 casserole dish, put in remainder of melted butter, then the rest of the whipping cream in the bottom of the dish.

Layer ½ macaroni mixture, ½ shredded cheeses, and Velveeta cubes, then the other ½ of macaroni, ending with the remaining ½ of the shredded cheeses.

Bake at 350 until bubbly, usually about 30 minutes.

Alma McHenry's Five Cup Fruit Salad


Ingredients:

3 oz lime Jell-O

1 package gelatin

1 cup crushed pineapple

1 cup mandarin oranges

1 cup shredded coconut

1 cup small curd cottage cheese

1 cup miniature marshmallows

 

Directions:

Mix gelatin with Jell-O mix and make according to package instructions.  Chill slightly.

Mix in all other ingredients. 

Can be frozen slightly and cut into squares.

Donna Wayman’s Corn Casserole


Ingredients

15 ¼ ounces Whole Kernel Cord, Drained

14 ¾ ounces Cream Style Corn

8 ounces Jiffy Cornbread Mix

1 cup Sour Cream

4 tbs butter, melted

1 ½ cup Shredded Cheddar Cheese

Directions:

Preheat oven to 350 degrees.

Grease 2-quart casserole dish.

Mix together:  Cans of corn, Jiffy Mix, sour cream, and butter in a large bowl.  Stir in shredded cheese, and pour into prepared dish. 

Bake 55 minutes or until golden brown and set.

Let stand 5 minutes before serving
