Roger Small's Microwave Peanut Brittle


Equipment Required:

One 2-cup Pyrex measuring cup

Heavy duty silicon spatula

One greased sheet pan

Ingredients:

1 cup sugar

½ cup Karo syrup

½ tsp salt

1 ½ cup peanuts

1 tsp butter

1 tsp vanilla extract

1 tsp baking soda

WARNING:  The mixture is going to get lava-hot, so please be careful.  Use hot pads for your hands and countertop.

Directions:

  1. Mix the sugar, karo, and salt well.  Nuke on high for 4 minutes.
  2. Mix in the peanuts, stir well, and nuke for another 4 minutes.
  3. Add the butter and vanilla, stir well, and nuke for 1 min 40 seconds.
  4. Add the baking soda and stir well.
  5. Pour out onto the sheet pan and let it cool thoroughly.
  6. Break it up with the back of a chef’s knife.

Roger sang tenor in our choir but he’s moved on and now singing in the Choir Triumphant!
