Sarah Oeltjen's Cream Cheese Roll Recipe


AK’s CREAM CHEESE ROLL

MIX – 1 CUP MILK - LUKEWARM

            1/3 CUP SUGAR

            2 PACKAGES DRY YEAST

LET STAND UNTIL YEAST IS SOFT

MIX -   4 CUPS FLOUR

             1/2 CUP SHORTENING

             1/2 CUP BUTTER

             1 TEASPOON SALT

MAKES A PIE CRUST CONSISTENCY

ADD – LIQUID AND 1 EGG BEATEN TO DRY INGREDIENTS

COVER AND REFRIGERATE OVERNIGHT

TO BAKE – DIVIDE DOUGH INTO 4 EQUAL PARTS

ROLL OUT LIKE A JELLY ROLL

MIX FILLING – 2 PACKAGES CREAM CHEESE (16 OZ TOTAL)

                          1 1/2 CUPS SUGAR

                          1 EGG BEATEN

                          1 TEASPOON VANILLA

SPREAD ON DOUGH TO EDGES, SPRINKLE WITH PECANS, ROLL LIKE JELLY ROLL

BAKE AT 350 ON LIGHTLY GREASED COOKIE SHEET – WILL BE SLIGHTLY BROWN ON TOP AND AROUND EDGES

BEST SERVED WARM – FREEZES WELL
